   Chicken Normandy

I never really knew what Chicken Normandy was and assumed it was a hard to make a gormet meal. It's basically just a chicken dish with apples in a cream sauce. I looked at about 15 diferent recipes and they were all a little different. Most of them had Apple Brandy in them but I didn't use that this time since I didn't have any. I would like to try it with Brandy next time but was still happy on how good this dish was. Here is the recipe I came up with which is mainly the basics from all the ones I looked at.

Ingredients

  • 3 Chicken Breasts (or your favorite peices)
  • Flour for dredging
  • salt
  • lemon pepper
  • 2 Tablespoons Olive oil
  • 1 Tablespoon lemon juice
  • 1 large onion (sliced 1/4 inch wedges)
  • 1 1/4 cup apple cider (cloudy kind)
  • 2 fuji apples (cored and peeled, sliced thin)
  • pinch of dried Tyme
  • 2 Tablespoons butter
  • 1/2 cup cream

Instructions

  1. Clean the chicken breasts and coat with your favorite spices. I used a little lemom pepper and salt. Dredge the chicken in the flour and shake of excess flour.
  2. On medium heat fry the chicken in the olive oil until brown and do the same to the other side. Remove rom pan and place on a plate. Cover to keep warm. Don't clean that pan!
  3. In the same pan add the onoins and cook until soft. The edges will start to turn brown. This will bring out the sugars.
  4. When the onions are ready, add the apple cider, butter, Tyme and apples and cook unti the apples are tender. Salt to taste.
  5. Put chicken back in pan on top of apples and cover. Cook until chicken it thoroughly cooked.
  6. Add cream stirring continously. You might need more to thicken the sauce than I have on my recipe. It depends on how much liquid came out of everything else that was cooked.
  7. Serve chicken on plate with the apples and add the suace on top. You can garnish with the chopped green onions.
Preparation time: 20 minutes

Cooking time: 45 minutes
