   Chicken Soup with Homemade Noodles

Wonder what to do with your leftover chicken? I have a great homemade chicken soup recipe with homemade egg noodles. It's another one of our family favorites. The noodles are pretty easy to make you just need to let them sit overnight. Last year mom's chicken noodle soup was the first soup gone at the campgrounds soup supper.

Ingredients

  • 2 cups flour
  • 1 large egg
  • 1 egg shell of water (both sides of egg shell)


  • 2 cups cooked chicken
  • 16 oz. chicken broth
  • 1/2 medium onion (diced)
  • 1 stalk celery (diced)
  • 2 small potatoes (diced)
  • salt
  • pepper

Instructions (Noodles)

  1. In medium bowl add the flour, egg and water. With a fork mix all ingredients well.
  2. Roll mixture into a ball and place on lightly floured surface.
    I use a large cutting board since I will be cutting it into strips.
  3. Flatten ball and roll out flat with a rolling pin. Flatten to at least 1/8 of an inch. It will be a little dry.
  4. Cut into 1/4 inch strips. I use a pizza cutter with another cutting board as a guide so it cuts straight.
  5. Cut the strips into about 3 inch lengths.
  6. Let these stand in the open air overnight to harden.

Instructions (Soup)

  1. In the morning I put the chicken, onion and chicken broth in a crock pot on low or you could put in a large sauce pan on the stove on low heat. Salt and pepper to taste.
  2. Add the noodles, celery and potatoes and let cook or 3 hours.
  3. Stir occasionally to keep noodles from sticking to the bottom
    of the pot.
Preparation time: 45 minutes

Cooking time: 3 hours
