   Stuffed Peppers


stued peppers in tomato sauce These ground beef stuffed peppers are a little bit different than most recipes on the net. Mine are completely submersed in tomato sauce while cooking. Here, I used some mango peppers and sweet banana peppers out of the garden. Put a lot of sauce on your plate which goes great with a baked potatoe. With all the extra sauce and meatballs I make a spaghetti sauce for another meal. This is really one of my favorites.

Ingredients

  • 6 large peppers
  • 1/2 cup Italian bread crumbs
  • 2 Lbs. ground chuck
  • 1/2 cup minute rice (uncooked)
  • 1 medium onion (diced and divided)
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 large cans tomato sauce
  • 1 tsp. salt
  • 2 bay leaves
  • 1/4 tsp pepper
  • 1 Tbs. brown sugar

Instructions

  1. Cut off tops of green peppers and remove seeds.
  2. Combine chuck, rice, bread crumbs, eggs, 2/3 of the onion, salt, pepper and cloves.
  3. Stuff mixture into peppers and place in pan.
  4. Form the rest of the mixture into balls and place on top and between peppers. (Use them for spaghetti sauce later)
  5. Cover with remaining tomato sauce, add bay leaves, 1/3 of the onion and sprinkle with salt, pepper and brown sugar.
  6. Cover with lid and bake in preheated oven at 350 degrees for
    1 1/2 hours or in a pressure cooker for 30 minutes.
  7. Use tomato sauce as a gravy for peppers.
Preparation time: 30 minutes

Cooking time: 1 1/2 hours
