   Navy Bean Soup

navy bean soup with ham This is a pretty easy recipe you make in a crockpot and start the night before you plan on eating it. I like a lot of ham in my soup so I use 1 ham hoc for taste but add a lot of ham meat. I grew up on my Dad's navy bean soup and like him I learned to eat it with a little of Grandma's catsup and a splash of white vinegar. I'm sure that is an aquried taste.

Ingredients

  • 1 Ham Hoc
  • 2 cups ham meat (of your choice)
  • 9 cups water
  • pinch of pepper
  • 1 tsp salt
  • 1 16 oz bag of navy beans
  • 1 large carrot
  • 1 medium onion
  • 1/2 Tbs. parsley
  • 1 stalk celery
  • 3 medium potatoes (optional)

Instructions

  1. The night before add the ham, ham hoc, water, pepper and salt in a crock pot and set on low heat over night.
  2. In the morning remove ham hoc, clean any meat off of it and put back in pot
  3. Add navy beans and diced carrots and diced onion
  4. 3 hours before you eat it add the parsley, diced celery and diced potatoes. If you add these in the morning they tend to cook down to much.
Preparation time: 35 minutes

Cooking time: overnight
