   Baked Fish in Panko Crumbs

This is my favorite recipe that my brother Chuck makes. I had him make it for me so we could document the recipe. The lemony taste of the panko crumbs and cheese mixture is superb which also keeps the fish very moist. This is one you just have to try.

Ingredients

  • 8 oz Kikoman Panko bread crumbs
  • 11 Tbs. unsalted butter
  • 2 cups grated parmesan cheese
  • 1 tsp. parsley
  • juice from 1 lemon
  • zest from 1 lemon
  • 1/2 tsp. cracked pepper
  • 1/2 tsp. kosher salt
  • 1/4 cup olive oil
  • 4 tilopia fillets (substitute salmon or your favorite fillet)
  • Parchment paper

Instructions

  1. First grate the cheese, melt the butter, chop the parsley and zest the lemon.
  2. Put panko crumbs in a medium bowl, add your butter and gently toss or fold together. Now add the cheese, parsley and lemon zest and gently toss then set aside.
  3. Put parchment paper on cooking sheet. pour about half the olive oil on parchment paper and spread for an even coating.
  4. Place your filets on parchment paper keeping at least an inch between them. Coat fellits with salt and pepper then dribble the remaining olive oil on top of fillets.
  5. Take your panko mixture and mound on each fillet and spread evenly to completely cover the fillet on top and sides. 3 fillets shown below.

  7. Use half the lemon and squeeze a generous amout of juice over each fillet.
  8. In preheated 350 degree oven bake for 12 to 17 minutes until the panko crumbs are golden brown. The crumbs touching the pan in the olive oil should be a dark brown like below.
