   Cabbage Rolls


This is a recipe that has been made in my family for generations. I’ve changed it a little to my liking. Since my father passed away, my aunts decided I would carry on the tradition of making 40 cabbage rolls for the families Christmas party. YEA ME!

Ingredients

  • 1 large head of cabbage
  • 1 Lb. ground chuck
  • 1/2 cup minute rice
  • 1 grated onion
  • 2 eggs
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 large can sauerkraut
  • 1 large slice onion
  • 1 large can tomato sauce
  • 1 large can small tomatoes
  • 2 Tbs. ReaLemon juice
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup brown sugar

Instructions

  1. Remove 12 large leaves from cabbage (Hot water helps to soften and loosen leaves.)
  2. Trim off thick parts of leaf.
  3. Start heating oven to 375 degrees.
  4. Combine meat, rice, onion, salt,pepper and 1/2 can of tomato sauce.
  5. Place mound of meat mixture in the cup of each leaf; roll up.
  6. In bottom of pan place a few of the remaining leaves.
  7. Arrange layers of stuffed cabbage with seam side down.
  8. Cover rolls with sauerkraut.
  9. Add sliced onions, tomatoes and the rest of the tomato sauce.
  10. Sprinkle on ReaLemon, salt, pepper and brown sugar.
  11. Bake covered for 1 hour , uncover, bake 2 more hours,
